I love baking unusual (for the United States) goods at home. I tried making a basque cake once, and well, let’s just say it was a bit of a disaster. (More than a bit to be honest). So sometimes I just want to be able to try something unusual, but not have to put in the effort with the possibility of screwing it up. Enter Tarts de Feybesse!
I found out about them as they were doing a pop-up at one of my favorite restaurants in San Francisco, so I decided I should support them and try one of the special desserts they had on order. And thanks to my Gateau Basque fiasco, I basically knew what I was going to have to get. The two chefs who own it are a married couple who, according to their website, met at Geranium Restaurant in Copenhagen in 2013. I, myself, was at Geranium Restaurant in 2014, so I like to say I have a part in their love story. And now we are all in the Bay Area, so it really is such a small world.
Since I pre-ordered, it was just a matter of swinging by and picking up my Basque Gateau, as well as some Sable biscuits that I also needed to add to my order, because why not? The cake looked absolutely amazing, and almost too pretty to cut into, but I love cake so it was going to happen. And it was pretty amazing. In case you don’t know, Basque Gateau is a cake with a layer of pastry cream in the middle and it really makes for a very moist and delicious cake. When I made it, it didn’t really work and the cream just kind of fell out. but this cake had an amazing texture. And the biscuits were light and crisp and almost perfect.
And, as it turns out, Tarts du Feybesse deliver to the Bay Area, so if you are really eager to try out their breads and desserts, you can look into getting it delivered instead of waiting for a pop-up, although I think they do a few off-piste items during their pop-ups, so maybe check out both. They often advertise their pop-ups on their instagram, so give them a follow if you are keen to try them out!
