As much as I love Mexican food, I do sometimes avoid it in the bay area as it’s mostly burritos, which I kind of feel average about at most times. However, sometimes I really get a craving, so I will decide to go out and give new things a try. I found myself at Cochinita Mayan Cuisine checking out their menu.
I decided I needed to try their signature dish, the Panucho. It’s very much like a taco, with a thick, handmade tortilla that is flash-fried for a little bit of crunch. It made it even better that I could choose two different fillings for them, so for one I went with the pork pibil and the other a chicken filling.
I was really pleasantly surprised with the food. There was a decent amount of flavor (which I often find lacking with California Mexican food), and the slightly crunchy tortilla was absolutely delicious. They were also both really decently sized, so it was a really hearty lunch.
I would definitely come back if I had another craving for some delicious Mexican food (and I was too impatient to make it myself). It’s a great, fast lunch and definitely a food truck to look out for!
